How time flies. I am now on my 7th brewing and have had a fair amount of success in home brewing. I started with the Emma's Ale (which after a month in bottles turned out great), two Witbiers, a bavarian wheat, an aussie light, and an irish red(currently in the primary fermentation stage). The aussie light should now be ready for drinking and the bavarian wheat has been mostly consumed(best when the beer isn't nearly frozen). My Octoberfest beer should be arriving tomorrow and I still have the Honey Ale to brew. I have a feeling I am going to be doing a double brew this weekend to try and keep a steady flow of beer going. I am going to do some updates on the individual beers that I have made and my future brewing plans.
Wine: No I didn't stutter. We(the wife and I) have started our first wine kit. The wine is really simple when compared to brewing beer but I think we can have some fun with wine. And if it turns out to be good, a cheap alternative to buying it all the time. We have followed the kit directions to a T for this one but I feel that we are going to experiment with future batches (using staves instead of the supplied 'dust', blending?). The only thing we are planning on doing differently with this batch is when we bottle we are going to fill a three gallon carboy and bottle the rest. Letting the three gallons age for a longer time before bottling which supposedly helps the wine age.
